Food Safety — We Report Practice, We Never Guarantee Safety
This is the line this site holds on every page: FreezeDryFoundry reports what the author’s batch log shows and what operators commonly report. It does not guarantee the safety, doneness, or shelf life of any food, ever. Freeze drying done wrong — incomplete drying, poor packaging, foods that don’t suit the process — can result in spoilage or foodborne illness.
- Official guidance wins. Follow USDA food-safety guidance and your machine manufacturer’s instructions. Where anything on this site differs from official guidance, official guidance takes precedence.
- Shelf-life numbers are reported, not promised. Any storage duration you read here is “commonly reported” by operators or stated by manufacturers — your results depend on residual moisture, packaging, storage conditions, and the food itself.
- Dry checks are your responsibility. Our doneness checks describe the author’s practice; verifying that your food is actually dry before storage is on you, every batch.
- High-risk preservation is out of scope. Anything canning-adjacent or involving low-acid food safety belongs with USDA/official guidance, not a hobby site.
No Professional Advice
The content on this site reflects the author’s experience running his own machine, batch after logged batch. It is not professional food-science, nutrition, or engineering advice. Cycle times, yields, and methods describe his unit, his utility room, and his foods — yours will differ.
Equipment Safety
Home freeze dryers involve vacuum systems, heaters, oil pumps, and serious power draw. Follow the manufacturer’s manual for installation (including electrical requirements, ventilation, and drainage), operation, and maintenance. Pump oil handling and disposal should follow the manufacturer’s instructions and local regulations.
Results May Vary
Food is biological and machines age. Two trays of the same berries can finish differently; the same cycle behaves differently in a cold garage and a warm utility room. The batch log behind this site exists precisely because honest numbers beat marketing claims — treat our numbers as one operator’s data, not a promise.
